This soup was inspired by the fall vegetable harvest coming out of my garden. The base of the soup is a rich tomatoes broth created from roasting tomatoes, peppers, onions, garlic, carrots and fresh herbs. This soup packs a hearty punch with potatoes, beans, and peas. Enjoy this hearty soup and feel great because it is vegan and gluten free.
